These cauliflower tacos have only four ingredients, cauliflower florets, chipotle salsa, minced garlic and taco seasoning.
September is always full of festivals, birthdays, parties and by the end of the month, I am just dreaming of something lighter. Don’t get me wrong I probably will never become a full fledged vegetarian but every once in a while, it’s just nice to not have meat. I also love to play with seasonings and sauces for maximum flavor. So I always feel so proud when I can make vegetables taste SO amazing. BONUS: with this recipe, I highly recommend also making this hatch chile sauce to go with these tacos, it just adds that extra depth of flavor and it is so good that I can eat the sauce straight out of the jar! I try not to, but sometimes it just happens.

The hatch chile sauce is full of flavor, garlic and creamy with a little spice
Ingredients
Chipotle cauliflower tacos:
- 2 pounds of Cauliflower florets
- 7.76 oz. of chipotle salsa (la costena brand)
- 1 tablespoon of minced garlic
- 2 tablespoons of taco seasoning (packet or homemade)
Hatch Chile Sauce:
- 2 cups of hatch chiles
- 1 teaspoon of salt
- 1 teaspoon of onion powder
- 1 teaspoon cilantro puree
- 1/2 cup of crema
- 1/2 cup mayonnaise
- 1 teaspoon of minced garlic
- 1/2 fresh lime juice (1 tablespoon roughly)
Instructions
- Turn the slow cooker on low
- add cauliflower florets
- then taco seasoning and garlic
- lastly pour in the chipotle salsa
- stir until cauliflower is fully covered
- cook for 4 hours
Hatch chile sauce:
- add all ingredients to food processor
- pulse on high until well blended
