These Easy Chipotle Cauliflower tacos are so tasty and incredibly simple to make. Made with Chipotle salsa to add smoky flavor with garlic and taco seasoning for a full flavored vegetarian taco.

These cauliflower tacos have only four ingredients, cauliflower florets, chipotle salsa, minced garlic and taco seasoning.

September is always full of festivals, birthdays, parties and by the end of the month, I am just dreaming of something lighter. Don’t get me wrong I probably will never become a full fledged vegetarian but every once in a while, it’s just nice to not have meat. I also love to play with seasonings and sauces for maximum flavor. So I always feel so proud when I can make vegetables taste SO amazing. BONUS: with this recipe, I highly recommend also making this hatch chile sauce to go with these tacos, it just adds that extra depth of flavor and it is so good that I can eat the sauce straight out of the jar! I try not to, but sometimes it just happens.

Enjoy! If you enjoy this recipe, I highly recommend adding the cabbage salsa recipe to this one and also trying the chunky guacamole recipe.
