Haricot Verts with Bacon


You will be the talk of the Thanksgiving table when you present this plate of bright green Haricot Verts and delicious bacon side dish. A must-try.


  • 2 pounds of Haricot Verts
  • 6 Slices of Bacon
  • 2 medium shallots
  • 1.5 cup of chopped walnuts
  • 2 tablespoons of walnut oil
  • 2 teaspoons of white wine vinegar
  • 1 teaspoon of Sea salt
  • Optional Garnishes:
  • Parsley and walnuts
  • More Bacon and Goat Cheese


  1. Chop Bacon and add to frying pan
  2. Fry over medium heat until crispy
  3. Remove with slotted spoon to large mixing bowl
  4. Heat oven to 350 degrees (if toasting walnuts)
  5. Bake walnuts for 5 minutes and set aside
  6. Chop and add 2 medium shallots to frying pan with bacon juices and cook until tender and translucent
  7. Boil water in large pot and add haricot verts for 7 minutes
  8. after 7 minutes remove and throw in an ice bath or bowl of ice water
  9. In large mixing bowl with bacon and shallots add 2 tablespoons of walnut oil,
  10. teaspoons of white wine vinegar, mix well
  11. Add haricot verts to frying pan for 3 minutes over medium heat and toss until warmed
  12. Add haricot verts to mixing bowl, mixing well
  13. Add 1 teaspoon of sea salt and mix well again.
  14. Add optional garnishes and serve
