Who wants summer in a bowl? A.k.a Fruit Salsa!
What do you do in the summer when you have an excess number of berries? Fruit Salsa! This is my go to recipe whenever I have a good amount of fruit in the house that needs to be eaten before all the fruit goes bad. It works with really any kind of fruit, I just happen to have berries this time.
Fruit Salsa:
I used equal parts (2 cups) of red raspberries, blueberries, cherries and grapes with a super simple lime and honey dressing, topped with mint. The lime and honey dressing I use whenever I serve fruit and I added mint this time because we have an abundant amount and it made it really taste like summer in a bowl!
Dressing:
To make the lime honey dressing with mint, I simply use a half cup of honey and 2 tablespoons of fresh lime juice and 4 teaspoons of finely chopped fresh mint. Add a few mint leaves for garnish.
Chips:
For parties or family gatherings I like to add cinnamon sugar tortilla chips, it is the perfect pairing to any fruit salad
To make the chips, cut up flour tortillas into quarters and place them on a baking sheet. Preheat the oven to 400 degrees. For a party, I cut up about 8 tortillas all together.
Melt some unsalted butter (about 1/2 cup) in the microwave at 30 second intervals until melted and grab some sugar and cinnamon. I started with a 1/2 cup of granulated sugar and sprinkled cinnamon separately as needed.
Brush the melted butter on the tortilla slices and then sprinkle sugar and cinnamon on them. To get an even spread, I sprinkle the cinnamon pretty far away from the chips. Bake for 15 minutes. Let cool and serve immediately.

- Fruit Salad:
- 2 cups of cherries
- 2 cups of grapes
- 2 cups of blueberries
- 2 cups of raspberries

- Mint leaves for garnish
- Chips:
- 8 (10-inch) flour tortilla chips
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- cinnamon to coat
Instructions
- Fruit Salad:
- Chop berries and grapes into halves or quarters
- (blueberries and raspberries I leave whole)
- Dressing:
- Mix together mint, lime and honey well.
- Pour over salad just to coat
- Chips:
- Preheat oven to 400 degrees
- Chop flour tortillas into 4ths
- melt butter in microwave in 30 second intervals
- brush butter and sprinkle cinnamon and sugar to both sides of the tortilla wedge
