Pickle Pico de Gallo

I made this pico as a topping for hot-dogs and had to share. Because it was so addicting, I ended up eating it as a dip and then kept making it. Pickle recipes are on the rise so this dish would be perfect for all you pickle lovers. To checkout the fully loaded hot dog recipe, click here.

The ingredients are simple, dill pickles, tomatoes, red onion, serrano, lime, salt, cilantro and agave nectar. What makes this dish so special is the balance of flavors, it is great as a topping or on it’s own as a dip.

I really enjoy making variations of pico de gallo. It’s mostly about balancing flavors and you can make any kind of pico. In a traditional pico you will find chopped Roma tomato’s, onion, serrano’s, salt, lime cilantro. Pico de gallo is great as a dip, or a topping, and adds a freshness to any dish.

Description

For the super spicy and pickle lovers! This pickle pico de gallo recipe has all of the things. Sweetness, spiciness, and saltiness which makes a great combo for pico.


Ingredients

Scale
  • 2 cups of chopped dill pickles
  • 2 chopped roma tomatoes
  • 1/4 cup red onion chopped
  • 2 serranos chopped with seeds (without seeds if you want less heat)
  • 1 teaspoon of lime
  • 1/4 chopped cilantro
  • 1 teaspoon agave nectar

Instructions

Combine all chopped ingredients into one bowl.

Add lime and agave.

Add salt to taste.

Place in the refrigerator for at least 30 minutes.

Notes

This recipe is spicier than most of my recipes because I choose to keep the seeds in the serrano when I chop them. This works with the sweetness of the agave. If you choose to not use the seeds, then make sure you add the agave nectar a little at a time.
