Lazy girl blueberry mint margaritas

Jump to Recipe·Print Recipe

This lazy girl blueberry mint margarita recipe is so easy and exactly what I do when I throw a large party. It’s delicious and saves loads of time.

Lazy girls Blueberry Mint Margaritas

Costco has this ready to drink margarita that I just love when I want to be lazy, or just save time to do other things like make carnitas! I’ve made other variations but this one is my favorite. The frozen blueberries create a syrup inside the margarita that acts as a simple syrup and the mint makes it fresh and gives it that taste of summer. I love it so. I first made this for my sister’s bachelorette party and I made so much we enjoyed margaritas three times after that from the same batch! FYI, if you have access to a lake, blueberry mint margaritas are the way to go.

The Process:

The ingredients are frozen blueberries, fresh mint and pre-made margarita mix (recommend Costco brand). Another great thing about this recipe is that you can make it up to three days in advance and it just keeps getting better. At the very least you should let it sit in the fridge over night. The day of the party, add some ice and stir and serve, super easy. You can also do this with red raspberries and mint, the combinations are endless. It’s a super easy way to offer many different kinds of margaritas with little work.

I used a 3 quart pitcher to do the mixing. Take the premixed margarita, open the cap and pop off the white plastic pourer on the top. It should come off easily. Pour the entire bottle of mix into the pitcher. Add about 1.5 pounds of frozen blueberries to the mix and stir well to break up the blueberries. Add 3 mint sprigs to the liquid and make sure the mint gets submerged before placing the pitcher in the refrigerator. I also make sure that the pitcher is shut air tight, I cut a lot of onions and I wouldn’t want my margarita to taste or smell of onion or other strong smelling foods in my fridge because I left the pitcher open.

After you’ve let the flavors blend for 4 hours minimum or overnight, you can enjoy!
