Pizza Quesadilla

Make these pizzas for your next party, so easy to make and feeds a crowd!


Ingredients

  • Pizza Sauce:
  • 6 Tomatillos halved
  • 1 Large white onion quartered
  • 3 Jalapenos halved with seeds removed
  • 2 Tablespoons minced garlic
  • 2 Tablespoons olive oil
  • 1 Teaspoon of salt
  • 2 Teaspoons of cilantro flakes
  • 2 Teaspoons of ground cumin
  • 2 Teaspoons smoked hot paprika
  • Pizzas:
  • 2 Large Burrito tortillas
  • 1 Red onion chopped
  • 1 Jalapeno sliced
  • 1 Tomatillo sliced
  • 1 Orange Pepper chopped
  • Fresh Cilantro chopped
  • Chihuahua cheese (or Mexican blend)
  • Tapatio hot sauce (optional)
  • Mexican crema (optional)

Instructions

  1. Sauce:
  2. Turn broiler on high and in a baking sheet with a lip add tomatillos, onion and jalapeno
  3. Drizzle olive oil over vegetables and sprinkle them with sea salt
  4. Broil for 5 minutes, take out, turn them upside down and then broil them for another 5 minutes.
  5. Once the vegetables are done, let them cool and transfer to food processor.
  6. Add minced garlic, olive oil, salt, cilantro flakes, ground cumin, and paprika
  7. Pulse until pizza sauce consistency
  8. Pizza:
  9. Preheat oven to 430 degrees(add pizza stone, if using one)
  10. Coat the outside of two tortillas with Pam or a little oil
  11. Fill with cheese to make a quesadilla
  12. Bake for 4 minutes
  13. Take out of the oven and add your sauce (about 1 cup)
  14. Add cheese, onion, jalapeno, pepper and fresh cilantro
  15. Bake for an additional 4 minutes or until cheese is melted
  16. Top with Tapatio and Mexican crema(optional)
