- Pizza Sauce:
- 6 Tomatillos halved
- 1 Large white onion quartered
- 3 Jalapenos halved with seeds removed
- 2 Tablespoons minced garlic
- 2 Tablespoons olive oil
- 1 Teaspoon of salt
- 2 Teaspoons of cilantro flakes
- 2 Teaspoons of ground cumin
- 2 Teaspoons smoked hot paprika
- Pizzas:
- 2 Large Burrito tortillas
- 1 Red onion chopped
- 1 Jalapeno sliced
- 1 Tomatillo sliced
- 1 Orange Pepper chopped
- Fresh Cilantro chopped
- Chihuahua cheese (or Mexican blend)
- Tapatio hot sauce (optional)
- Mexican crema (optional)
Instructions
- Sauce:
- Turn broiler on high and in a baking sheet with a lip add tomatillos, onion and jalapeno
- Drizzle olive oil over vegetables and sprinkle them with sea salt
- Broil for 5 minutes, take out, turn them upside down and then broil them for another 5 minutes.
- Once the vegetables are done, let them cool and transfer to food processor.
- Add minced garlic, olive oil, salt, cilantro flakes, ground cumin, and paprika
- Pulse until pizza sauce consistency
- Pizza:
- Preheat oven to 430 degrees(add pizza stone, if using one)
- Coat the outside of two tortillas with Pam or a little oil
- Fill with cheese to make a quesadilla
- Bake for 4 minutes
- Take out of the oven and add your sauce (about 1 cup)
- Add cheese, onion, jalapeno, pepper and fresh cilantro
- Bake for an additional 4 minutes or until cheese is melted
- Top with Tapatio and Mexican crema(optional)
