Leftover Ham Tacos

This leftover Ham Taco recipe are for those who have a bunch of leftover ham that they don’t know what to do with. I hope this provides some much needed information. The recipe covers everything you are looking for in a taco, sweetness, saltiness and heat. It is very delicious.

This year was a weird Easter for all of us I’m sure. We were away from family and friends due to the quarantine and we had this 10 pound ham. So my husband and I decided to cook it anyway. Man do we have tons of leftovers. For the first couple of days I made some delicious Puerto Rican rice to go with the ham and today we’ve decided to make tacos. Once we assembles everything together, we knew we were on to something. The flavors of sweet, salty and spicy all coming together really is what makes these tacos so good!

As a bonus we made a blended Pineapple-Habanero salsa to go with these tacos, but any spicy, fruity salsa will do.

Then you can re-heat your ham and your ready to assemble. So easy!

To make the Pineapple-habanero salsa you will need:

  • Pineapple (fresh or frozen will do)
  • Habaneros (seeds removed and pan-fried or grilled)
  • A can of Fire Roasted Tomatoes
  • A small onion
  • Lime Juice
  • Salt

To assemble your tacos you will need:

  • Pineapple-habanero salsa
  • Sweet corn
  • Ham
  • Optional: lettuce
  • Optional: Avocado
  • Queso fresco
  • Optional: Onion
  • Optional: Cilantro

Ingredients

Scale

Pineapple-Habanero Salsa

  • 1.5 cups of Pineapple (frozen or fresh)
  • 3 habanero peppers (pan fried or grilled, seeds removed)
  • 1 10-oz can of Fire roasted tomatoes with chiles
  • 1/2 cup of onion
  • 1 Tablespoon of lime juice
  • salt to taste

Taco Toppings:

  • Leftover Ham
  • 1/2 can of sweet corn
  • pineapple-habanero salsa (or a fruity spicy salsa)
  • 1/2 avocado diced
  • 1/4 chopped lettuce
  • 1/2 onion chopped
  • 1/3 cilantro chopped
  • corn tortillas
  • queso fresco, crumbled

 


Instructions

Pineapple-habanero salsa:

add all the ingredients to a blender and blend until smooth

if using frozen pineapple, grab a frying pan over medium heat and add 1 teaspoon of olive oil in the pan until just hot and then pour blended salsa into the pan, cook for 3 minutes or until warm.

Taco Assembly:

warm up sweet corn, ham, tortillas and salsa

add toppings of your choosing, making sure not to forget the sweet corn, salsa and queso fresco

Notes

I recommend making sure you at least have the corn and salsa in your taco. They balance out the saltiness and sweetness of your ham.
