These Jalapeno Salmon burgers with grilled pineapple will knock your socks off with flavor! Tender and flavorful salmon patties with crispy grilled pineapple and spicy sweet mustard on a Pretzel bun, oh my! The recipe is another staple in our home during grill season, I love love love spicy and sweet flavors and this dish does not disappoint.
For this recipe, you will need about 4 salmon fillets with skins removed. Take the fresh salmon (if using frozen make sure fillets are fully thawed prior to food processor) and add to food processor, pulse until big chunks are gone and salmon is coarsely chopped.
Place the salmon into a large mixing bowl. Add breadcrumbs, chopped cilantro and jalapeno, egg, mayo, hot-sweet mustard, salt and pepper. Using your hands mix all the ingredients together well.
Everyone has their own way of making patties, I usually grab a palm full and start rolling it into a meatball shape using my hands. Next, I press down on the meatball until a patty starts to form smoothing the sides with your hands. Then I cut the pineapple into ringlets, if not using fresh pineapple, make sure you wash the canned pineapple (in water) to remove excess juice, not only will it be messy on the grill if you don’t, but the pineapple will also be overly sweet.
Add the pineapple and salmon patties to the grill over medium heat. Cook until the internal temp is at 145 degrees. I grilled for 4 minutes and then flipped once for another 4. Same with the pineapple. Side note: This is where my husband and I part on flavors. I like my pineapple extra crispy (I love that crunch!), and I still get my pineapple flavor with slightly less of the sweetness. My husband prefers a just slightly grilled pineapple where the pineapple is still super juicy and adds to the flavors of the mustard. So, you should decide how long you would like to grill the pineapple based on which way you prefer. 🙂
Now, I would like to take this opportunity to discuss this obsession I have with mustard. I’m not sure if it’s from spending my early years living in Germany or what, but I LOVE mustard. It’s the top condiment sitting in my fridge, always. I have more mustard’s in my fridge, more than I do hot sauce, and that’s just crazy (so says my husband). Anyways, this particular mustard came from our local meat market, I love the Inglehoffer brand, it’s my most used and it comes in such a variety of flavors.
Once, your salmon patties and pineapples are grilled, you are ready to assemble! I used a salad spring mix for the greens, then the grilled pineapple, salmon burger and lastly, a whole lot of mustard with a pretzel bun….so good!

Ingredients
- 4 Salmon fillets (skins removed)

Instructions
- Put salmon into food processor until all big chucks are gone
- Put salmon into mixing bowl
- Add breadcrumbs cilantro, jalapeno, egg, mayo, lime juice, mustard and salt, pepper to bowl
- Mix well and form into patties
- Grill over medium heat until patties reach internal temp of 145 degrees
- Assemble however you’d like, I used spring lettuce mix with the burger, pineapple and added more mustard on a pretzel bun
