Ingredients

  • 4 Pounds of Russet Potatoes (8 medium)
  • 1 Tablespoon of Salt
  • 1.5 Cups unbleached all-purpose flour
  • 4 tablespoons of Olive Oil
  • 1 Carrot
  • 1 Onion
  • 1 Handful of parsley
  • 1 Handful of basil
  • 2 garlic cloves
  • 1 Pound of ground beef
  • 2 pork sausages
  • 1 Pinch of salt and pepper
  • 1 Cup of red wine
  • 1 Can of 28-oz whole peeled tomatoes, coarsely chopped
  • 1 Tablespoon Tomato Paste

Instructions

  1. For Gnocchi-Bake potatoes at 350 degrees for one hour
  2. Peel potatoes and put through potato ricer
  3. Add salt to recently riced potatoes
  4. On a flat surface add all flour and place potato in the middle of it
  5. Mix flour and potato together until turns into dough (about 7 minutes of kneading)
  6. Once dough is in a bread like structure, cut into 8 segments like a pizza
  7. Take each segment and roll using your hands until you get a long string 1/2 inch thick
  8. Cut into mini pillow looking pieces
  9. Boil salted water and add gnocchi 1/4 at a time
  10. Once gnocchi floats to the top, remove with slotted spoon and repeat.
  11. For Soffritto- Add carrot, onion, celery, parsley, basil and garlic to food processor
  12. Take mixture, add to saute pan with 4 tablespoons of olive oil, saute 10 minutes
  13. For Meat Sauce- In a 4-quart stock pot, brown beef and sausages
  14. Add salt, pepper, and red wine until wine is evaporated
  15. Add soffrito, tomatoes and tomato paste
  16. Mix together and partially cover on low to simmer for 3 hours, stirring every so often
  17. Add cooked gnoccgi to frying pan and coat with meat sauce
  18. Serve immediately
