- 4 Pounds of Russet Potatoes (8 medium)
- 1 Tablespoon of Salt
- 1.5 Cups unbleached all-purpose flour
- 4 tablespoons of Olive Oil
- 1 Carrot
- 1 Onion
- 1 Handful of parsley
- 1 Handful of basil
- 2 garlic cloves
- 1 Pound of ground beef
- 2 pork sausages
- 1 Pinch of salt and pepper
- 1 Cup of red wine
- 1 Can of 28-oz whole peeled tomatoes, coarsely chopped
- 1 Tablespoon Tomato Paste
Instructions
- For Gnocchi-Bake potatoes at 350 degrees for one hour
- Peel potatoes and put through potato ricer
- Add salt to recently riced potatoes
- On a flat surface add all flour and place potato in the middle of it
- Mix flour and potato together until turns into dough (about 7 minutes of kneading)
- Once dough is in a bread like structure, cut into 8 segments like a pizza
- Take each segment and roll using your hands until you get a long string 1/2 inch thick
- Cut into mini pillow looking pieces
- Boil salted water and add gnocchi 1/4 at a time
- Once gnocchi floats to the top, remove with slotted spoon and repeat.
- For Soffritto- Add carrot, onion, celery, parsley, basil and garlic to food processor
- Take mixture, add to saute pan with 4 tablespoons of olive oil, saute 10 minutes
- For Meat Sauce- In a 4-quart stock pot, brown beef and sausages
- Add salt, pepper, and red wine until wine is evaporated
- Add soffrito, tomatoes and tomato paste
- Mix together and partially cover on low to simmer for 3 hours, stirring every so often
- Add cooked gnoccgi to frying pan and coat with meat sauce
- Serve immediately
