Avocado Spinach Pesto with Edamame Noodles

This avocado-spinach pesto with edamame noodles is special treat. Flavorful pesto with luxurious avocado makes this pasta dish feel like it has an alfredo sauce without the cream or the calories. Just flavorful healthy goodness, that of course doesn’t taste healthy.

Why avocado spinach pesto with edamame noodles? I’ve never been able to explain the mad scientist thoughts that go through my head when I have an idea for a recipe. However, it usually starts with a main ingredient to highlight and for this recipe I wanted to highlight the avocado. Next, it normally goes to whatever I have a taste for and then I try and figure out a way to either make it slightly healthier or add nutrients. You know make it my own. Then I practice until it tastes good, my husbands favorite part of course.

I love love love pesto in the summer time. However, avocados are best normally in January, February and March and I had some super ripe ones on hand. Then I had a full bag of spinach I needed to do something with, along with a Costco sized bag of whole almonds. Also, I really enjoy these edamame noodles sooo much but they do have a green hue to them after they are cooked, so why not cover them with a more vibrant green such as pesto! A couple of recipes ago I just absolutely fell in love with these little roasted tomatoes. They just add so much flavor and are simple to make. Lastly, a little parmesan cheese to top it off, what’s not to love!

This recipe is so easy to make. Just add all of the ingredients in the food processer and done! You have pesto, ready to be added to any noodle that you choose.

These noodles only take about 10 minutes to make, or 4 minutes after the water starts to boil.

The cherry tomatoes just need a drizzle of olive oil and salt followed by only 10 minutes in the oven.

Everything from start to finish will take you about 20 minutes. Dinner in a jiff and super tasty. That’s what I like. The picture above shows what the edamame noodles look like naked just after cooked.

Ingredients

Scale
  • 2 cups of spinach
  • 1/3 cups of unsalted almonds
  • 1/2 cup of olive oil
  • 1 garlic clove
  • 1/2 of a fresh lime juiced
  • 1 cup of grated parmesan
  • 1 whole ripe avocado
  • 1 cup fresh basil
  • 1 box of edamame noodles (regular spaghetti noodles work too)
  • 10 oz of nature sweet cherry tomatoes
  • salt and olive oil as needed to taste
  • 1 food processor

Instructions

  1. Pre-heat oven to 425 degrees.
  2. Plug in your food processor.
  3. Add spinach, almonds, olive oil, garlic, lime, parmesan, avocado and basil.
  4. Place on high until you get as smooth of a consistency as possible.
  5. Add more olive oil as needed to get a smoother texture.
  6. Add salt to taste, set aside.
  7. Add cherry tomatoes to a small sheet pan, drizzle with olive oil and salt.
  8. Bake for 10 minutes.
  9. Make edamame noodles according to packaging, set aside a small amount of water when draining the noodles (1/4 cup)
  10. Place cooked noodles in a large serving bowl, top with pesto and mix in well, add noodle water as needed until just combined.
  11. Top with roasted tomatoes, more parmesan and salt as needed.
  12. Enjoy!

Notes

You can make the pesto ahead of time for a quicker meal!
