Chorizo and Eggs! YUM!

If you have a house full of people this holiday season and are looking for something to feed the masses other than a breakfast casserole, then I have the answer for you! Between my 2 brothers, brother-in-law and husband, I have some meat eaters on my hands during the holidays. This recipe always feeds them well, allows them to have seconds and only takes 20 minutes to make. Also, as a side note, for those of you whom have had a little too much spiked egg nog the night before, this will cure whatever ails you the next day. I have been making this chorizo and eggs recipe for years and it is my go to breakfast whenever I have a lot of people staying at the house. All you need is an onion, minced garlic, a bag of frozen diced and seasoned home fries potatoes, chorizo and tortillas. That’s it!

To start out, in a large frying pan add chopped onion, garlic, chorizo, and potato. Side note if you’ve never cooked Mexican chorizo before, don’t forget to cut the meat out of the casing. The chorizo is so flavorful and filled with so much seasoning that you will not need to add any other spices.

Cook the ingredients in the frying pan until the potatoes are cooked all the way through and the meat is crumbly, typically about 15 minutes. Then, add the eggs. Scramble the eggs into the frying pan with the rest of the ingredients until the eggs are fully cooked, usually about 5 minutes. The eggs will look crumbly along with the meat.

To make the meal go a little further, I always serve with tortillas, Mexican cheese and an array of hot sauces. Cilantro also makes a great garnish to the breakfast.

Description

Need a quick breakfast that is warm, flavorful and will feed many guests, this is the breakfast for you!


Ingredients

Scale
  • 12 oz of Chorizo
  • 6 Eggs
  • 1 16 oz bag of Home-fries Potatoes (halved)
  • 1 medium onion chopped
  • 1 tablespoon of minced garlic
  • Options:
  • Garnish with cilantro
  • Add Tortillas, Mexican shredded cheese, and hot sauce

Instructions

  1. Add Chorizo, onions, potatoes and minced garlic to large frying pan
  2. Cook until potatoes are cooked through and meat is crumbly
  3. Add eggs and scramble them into a frying pan with the rest of ingredients until fully cooked, usually about 5 minutes
  4. Garnish with cilantro
  5. Add Tortillas, Mexican cheese and hot sauce for breakfast burrito’s

    My mom made chorizo and eggs a lot when I was growing up. I’ve had the pleasure of trying this version and it was delicious!! Definitely one of my favorites on Savor Paradise so far!

    Chorizo and eggs was a weeky staple growing up in East Chicago, Indiana. This recipe with all its aromatic ingredients took me back to my mom’s kitchen. There seems to be some magic when flour tortillas meets chorizo and potatoes.
