What is No dressing salad?
It is a salad that is perfectly and strategically put together so that you don’t need any salad dressing. Also, it’s delicious!!!
My mom and I have been on our mother-daughter trip in Florida for a little over a week now. We’ve been sight-seeing, eating at fabulous new places and have visited family that stuffed us full of home cooking! So it was hard to find inspiration for this week’s recipe. I feel like I’ve eaten all of Florida!?
When the time finally came, I knew I should choose something light. I’ve decided to share my go to No Dressing salad with you. This salad was first shared by my mother-in-law who absolutely loves adding fruit, vegetables and sometimes even chocolate to her salad. So, over the years I’ve found my favorite ingredients to make my version of this salad.
The basis for the salad is a spring mix. If you cannot find a spring mix, make sure you add arugula and spinach to whatever bed of greens you decide to get. Once you have your nice bed of greens, add some sliced cherry tomatoes and some diced red onion. Then for even more color and flavor, add some cubed mango with the juices, blueberries and pomegranate seeds. At this point, you can add any nuts that are your favorite. I always add sunflower or pumpkin seeds. I do get salted vs. unsalted, since I will not be adding any seasoning to the salad.
Now for the avocado and lime, I wanted to add a little side note about this. If you are prepping this salad for a party, I highly recommend cutting up the avocado into a separate bowl and squeezing all the lime into that bowl. Let the avocado and lime sit in the bowl until you are done with making the salad. This will help the avocado to not brown before you serve to your guests.
Lastly, add goat cheese to the salad after the avocado and lime. Mix very well. An optional item that can be added is some sort of protein. My all-time favorite is edamame, but if you cannot find it, then the smallest can of tuna will work.
Since there is no actual dressing going into the salad, it is important that it is mixed really well. The reason you don’t need dressing is because all the components are there. The avocado adds the oil component, the mango (when you cut the mango, save any juices from your cutting board and try to add to the salad) and lime juice add the vinaigrette consistency and the sunflower seeds add a little bit of saltiness. The rest is whatever you like.?
I served this salad with a side of avocado pumpernickel toast and red grapefruit sparkling water.
Perfect for any occasion, this no dressing salad has so much flavor you won’t miss the dressing.
- 5 oz Spring Mix
- 5 oz Cherry Tomatoes
- 2 Cubed Avocados
- 5 oz Blueberries
- Juice of 1 Whole Lime
- 1 Whole Mango Cubed with Juice
- 5 oz of Cubed Goat Cheese
- 2 oz of Pomegranate Seeds
- 1 Small Red Onion Chopped
- 1/3rd Cup Sunflower Seeds
- Optional Protien:2 oz of Tuna or Edamame
Add chopped ingredients into a large bowl and serve
