BROWNIES:
I have wanted to make these for sooo long, but I have always just looked at the ingredients and thought…why? Why would someone do that to brownies! But I’m here to say they are amazing! I love brownies, next to French macarons, they are probably my favorite dessert. However, I’m not the greatest baker. I keep trying and I’m slowly getting better but not quite there yet with the brownies. Also, with February being my birthday month (yes, I get a month…as I think we all should), I wanted to make some of my favorite things and this year I am doing a Happiness Reset Challenge where I take nutrients that promote good mood and do my best to make healthier choices. This month we are concentrating on magnesium.
Magnesium:
What made this recipe so appealing for the challenge is that I used cacao powder (not cocoa, but you can use that too), cacao nibs, black beans, avocado, walnuts and raspberries, which makes this dessert a magnesium power house. So healthy and delicious. Each brownie has roughly 55 mg’s of magnesium. I use cacao powder instead of cocoa powder here because cacao has a much higher nutritional value than cocoa powder. Especially in magnesium, iron and antioxidants. It works well in recipes that dark chocolate work well in or recipes where cinnamon can be used. It can has a slightly bitter taste if too much is added. For the cacao nibs, I started munching on these when I want a dark chocolate fix instead. They kind of taste like a combination of dark chocolate and a nut of some kind. The health benefits are really great.
Technique:
Another great thing about these brownies, especially for a not-so-great baker like myself, is that you just add all the ingredients into the food processor and blend on high until you get a smooth brownie batter. Then pour into a 8×8 baking dish and bake! Easy peasy. I don’t have to worry about wet vs. dry ingredients or any other complications. Then I just top with my favorite toppings and they are ready to eat! The original recipe that I used was from another blogger called Krollskorner. I fell in love with her brownie picture on pinterest and had to save it and it’s been the recipe I use, with my own adaptions of course, please check out her original recipe for Black Bean Avocado Brownies. The only difference in mine is that I use cacao powder and coconut oil as well as cacao nibs, walnuts and raspberries as a topping.
Taste:
So when I first made this recipe I made it without any toppings because I wanted to see if it would stand up on it’s own. I would have to say that I could tasted the avocado a teeny bit. However, if you add chocolate chips or candy or any of your favorite toppings, it is so good! You forget it’s chocked full of really good stuff for you.

Avocado Black Bean Brownies

Ingredients
- 1–15 oz can of Black Beans drained and rinsed
- 1/2 cup of Cacao Powder
- 3 Eggs
- 1/4 cup of melted Coconut Oil
- 3/4 cup of Sugar
- 1/4 tsp of Salt
- 1 tsp of Baking Powder
- 1 tsp of Vanilla Extract
- 1 medium Avocado
- Optional Toppings
- 1/4 cup of Raspberries
- 1/4 cup of Cacao Nibs
- 1/4 cup of chopped Walnuts
Instructions
- Drain and rinse the black beans.
- Combine all of the ingredients except for the toppings in a food processor.
- Mix on high until you have a creamy consistency with no lumps.
- Pour mix in an 8×8 baking pan.
- Bake for 40 minutes at 350 degrees.
- After removing from the oven, let sit for 20 minutes before cutting and serving.
Notes
Spray your cutting utensil with PAM for a cleaner cut on your brownies.

When do you add the toppings please?
I’ve added them just before putting them in the oven as well as have made them before where I have waited for just when the came out of the oven. In the photos here, I added them just before placing them in the oven. I don’t have a preference. If I was just adding the raspberries by themselves I probably would wait until just after they came out of the oven, the same for when I use blueberries.
