It’s okay. Everything will be okay. If you are having the week that I’ve had and haven’t decided what to make for Easter brunch, don’t worry – I’ve got your back. It’s not too late to make some really beautiful brunch dishes. The secret is to have your quick and delicious recipes that are easy to make and look beautiful on the table as well. Especially the shortcuts! Here are a list of 10 to get you started.
My shortcut here is purchasing already boiled eggs in a bag from the grocery store! They even have the shell already off of them, so no mess. Not a fan of spicy, then you can take out the seeds and the membranes from the Jalapeno. Just assemble and watch these eggs disappear.
This drink is a quick assembly of just four ingredients. Don’t feel like purchasing Grand Marnier? Just add OJ or fresh squeezed orange. Bada Bing-Badaboom.
Another quick assembly item. You can find already chopped broccoli bagged as well as bagged spinach at the grocery store and you can use canned corn and canned beans in a pinch. I love how colorful and healthy it looks even though you and I know it tastes better with cheese.
Don’t feel like mashing avocados, then don’t! Grab the same ingredients to make your guacamole, chop the ingredients then add your lime juice to soften the avocado and mix. Don’t forget to taste and add salt at the very end.
5. Mojitos with homemade mint simple syrup
Don’t have time to make homemade simple syrup? Grab some from the store and add mint while making your drinks. Or in a pinch use agave syrup. yum.
6. Fruit Salsa with Cinnamon Sugar Chips
I have made this with the chips and without the chips. This recipe travels really well and can act as a dessert with a little chocolate drizzle for those friends who are always wanting to eat healthy.
This one is always a favorite on the table. If you don’t have time to cook fresh corn, use canned. This recipe is for those winter moments when you are longing for your grill and some mexican street corn. Once you have your ingredients it’s a quick assembly.
This is a personal favorite of mine. Not only does it look colorful on any table but add some chips and you have a flavorful dip or you can use it as a side. In a pinch I’ve turned it into a coleslaw by just shredding the cabbage to look like a slaw. This will be our little secret.
9. Churro Crescent Rolls with Nutella
For those of you who always keep crescent rolls in your fridge, skip the bread service and add dessert instead! This quick recipe has just 6 ingredients and will go really fast if served warm and you probably already have cinnamon and sugar in your pantry.
Add creativity to your brunch by adding an avocado toast bar. Roll out the crescent roll pizza dough, add your favorite avocado spread and have your guests add their own toppings and cut into bite size pieces to share. Don’t forget the drinks to go with!
