Hi! Welcome, my name is Elena. Do you love tacos? I love tacos….let’s be friends!
What you can expect from this site:
Now that we’ve established that you love tacos as much as I do, here you will be able to find SO many ideas for tacos. My mentality is that we are in a world that moves fast….like really fast. So don’t spend so much time preparing the food but enjoying the food! I’m here to help. On my website you will either find easy recipes that you can throw together or quick recipes that take little time but have maximum impact. Not only will I provide ideas for tacos but also ideas for toppings, sauces and oh did I mention tequila drinks. I probably should have started with that, ha!
Not only do I want to provide information on recipes, but I also want to show you how you can enjoy tacos in your house every day! New subscribers will receive information on tips and tricks like what to keep in your pantry, how to heat tortillas and what tequila should be kept on hand (you know the important stuff)!
I know we all love to read large anecdotes on the origins of every detail (just kidding!). However, I would like to share small facts in hopes I can share parts of my colorful and beautiful culture with you.
What is my purpose:
To share information:
I have always loved doing this, if something I share makes your life easier, happier or you can walk away and say “Huh, I learned something new today.”, then I’m doing my job! I have always loved to share information, that passion has followed me through each career. In today’s climate, it is imperative that we all share information that we have, to learn more about what makes us wonderful and unique.
I’m a natural born problem solver, love to cook, create in the kitchen and take beautiful photos of food. Sharing these skills will help you have TACOS EVERYDAY…..hello!
To provide quick, easy recipes that will feed and entertain in a playful voice with uncomplicated instructions. Helping those with little time and an adventurous spirit escape from everyday life as if you were back on vacation.
My Dad’s family, more specifically my grandmother, is from Guanajuato Mexico (Leòn) which is located right in the central part of Mexico and its history began as a community that grew up next to silver mines sitting just outside of the city. So, much of the food created there was made for the working man, specifically tacos.
My Grandmother on my mother’s side was born in Humacao, Puerto Rico. The food is also amazing from there and has so much history and deep culture. This town every year throws a parade just for its most favorite ingredient, the breadfruit. On the outside it looks like jack fruit but is mostly used like a potato. It is often used in dishes such as bacalao (salted cod fish) or mofongo (a deep-fried plantain dish filled with meat).
AND then there is me. I was born in Indiana and my father was in the military (ARMY), so I had the pleasure of growing up in Germany for most of my childhood before moving to Georgia for my pre-teens and then landed back in Indiana. I’ve moved around a little bit since then but after meeting my husband we now live on a gorgeous lake back in Valparaiso. My food culture is all over, but I always come back to tacos! In my life I’ve learned to make not just traditional tacos but new creative tacos as well. I am an equal opportunity taco maker. When I was living on my own and had very little in the fridge, you better believe I heated up a hotdog and threw it in a flour tortilla with cheese and ketchup. Although these were desperate times, it was DELICIOUS in that moment.
It was important to me to have a great education and was something I always wanted to achieve and I’m glad I made the decision to go back later in life. I was able to get my bachelors in Business Management and my Masters in Analytics (a glorified data geek). These have helped me launch my own business and be here with all of you while pursuing my passions.
I have been blogging for awhile now and have failed A LOT, but also have had the necessary successes to keep my passion and make a living from it. I will never give up! Growing up, I was very close to my grandmother and always ate her food as well as watched her in the kitchen. This carried over to my Dad always being in the kitchen and now it is my turn to carry the torch. My dad and grandmother always dreamed of opening a Mexican restaurant or small taco stand. However, with my somewhat introverted personality, behind the camera and computer is just fine with me.
This blog is for them.
I’m obsessed with all things 80s! Movies, music, clothing…I just can’t get enough! I really am one big goofball.
Huge Disney fan….Snow White to be specific but also Indiana Jones and Star Wars obsessed. I mentioned I was a geek earlier right? John Williams is the greatest composer to ever live…just going to throw that out there.
When I’m not creating recipes, doing food photography/food styling, working on the backend of my website or working with brands (phew!), I am hanging out with my friends. I’ve pretty much had the same friends for about 20 years and we do our best to stay active in each other’s lives.
I love hosting parties! I love coming up with a theme and a menu, it is so great to have a plan and see people happy because of something you did.
Traveling with my husband! We love pretty much eating around the world and trying new things, if we are not watching a travel show on tv then we are planning our next trip. We’ve been to so many places nationally and internationally.
Tequila! Eventually, I would like to try all the tequila in the world! Each bottle is designed differently and has different flavors and notes (like wine).
I enjoy hot stuff (there I said it)! I can’t help it, it is almost like a challenge every time you eat. Can something ever be too hot? Never!!
I love plants and my little robotic R2D2. On top of all the potted peppers and herbs I have on our deck I also have inside plants as well as a lime and clementine tree. These are my babies.
Thank you from the bottom of my heart for taking the time out of your life to read this and get to know me. Feel free to contact me to share things about you.
